Le thé rouge s’ouvre d’abord par ses arômes. Floral, fruité, miellé, caramélisé, torréfié, fumé, boisé — la palette est vaste et ne suit pas une seule direction.

La feuille est laissée à une oxydation complète. Après le flétrissage et le roulage, elle continue d’évoluer jusqu’à ce que sa structure se forme pleinement. La chaleur intervient ensuite pour interrompre ce mouvement et le fixer.

Ce qui importe n’est pas une note isolée, mais la manière dont ces éléments s’assemblent. Certains thés se montrent plus lumineux et aériens. D’autres s’installent dans quelque chose de plus profond, plus chaud, plus posé. La différence vient du terroir, du cultivar, de la cueillette, du degré d’oxydation et de la manière dont le processus est conduit.
