Le thé blanc chinois subit très peu de transformation. Les feuilles se flétrissent, perdent leur eau, puis sont simplement séchées telles quelles. Affiné par une intervention minimale, le résultat est souvent nuancé et élégant.

La différence commence dès la feuille. Le Silver Needle ne prélève que le bourgeon et porte une note fine et duveteuse. Le Bai Mu Dan associe le bourgeon à une ou deux jeunes feuilles à peine ouvertes et développe une palette de notes florales. Plus loin encore, les feuilles sont entièrement ouvertes, avec leur tige : le thé devient alors Shou Mei, à la forme plus large, à la structure plus libre, où le bourgeon s’efface davantage pour laisser la feuille s’exprimer.
