Collection: White tea

Chinese white tea undergoes very little process. The leaves wither, lose water, and are dried as they are. Refined through minimal handling, the result is often nuanced and elegant. The difference begins at the leaf. Silver Needle takes only the bud and carries a fine downy note. Bai Mu Dan holds the bud with one or two leaves just opening and moves into a range of floral notes. Further on, the leaves are fully open, with stem, and the tea becomes Shou Mei, broader in shape, looser in structure, with less of the bud leading and more of the leaf speaking.
