Collection: Shu Pu-erh

Shu Pu-erh is defined by fermentation. After the leaf is made into maocha, it is piled, moistened, and covered, and heat builds within the pile as it sits. The pile is turned as it moves, water added or held back, the leaf kept together or opened as needed, the work following what is happening inside the pile rather than forcing it from outside. The tea is already settled when it reaches the cup, the liquor sitting low with weight, moving slowly across the palate, the body rounded. It does not wait on time to become drinkable. The result is set in the making.
