Collection: Green tea
Green tea is kept close to the fresh leaf. Once picked, the leaf is heated early to hold that state in place.
The handling differs. Some teas are pan-fired, others baked, steamed, or sun-dried. The aim is the same. The leaf is fixed before it has time to move.
What remains is the fresh state of the leaf. Some teas are direct and immediate, with a nutty or bean-like edge. Others sit higher, lighter, more lifted. The difference comes from how the leaf is taken, and how the heat is applied.
These teas are best read in the first infusions, where the leaf is still close to what it was.
