After trying the Zheng He Yin Zhen, we sadly realized that we wouldn't be offering this long waited tea this year. Weather hasn't been kind in the Zheng He county and we are now hoping that the production of Bai Mu Dan will be better. Our contact in Zheng He was kind enough to recommend us to a local farmer in Fu Ding and we are happy to be able to offer premium quality Fu Ding Yin Zhen at a good price. Entirely hand-made from Fu Ding Da Bai Hao tips and sun dried, these high quality Yin Zhen exhibits a good amount of white fur on a healthy pale green leaf. This is a sign of quality in Yin Zhen as fully white leaves (fur and leaf) show that the tea went through a process using "liu huang" which consists in making the overall looking of the tea more white. The liquor is pale yellow, as it should be, and the nose reminds a little sweet nutiness. The soup is quite thick showing that the tea comes from healthy trees. Taste is sweet, with some eggy edge and a long and pleasant aftertaste.
Tips : When you brew Chinese white tea in a gaiwan, always leave a little bit of tea in the gaiwan between each infusion. This is call “the root” and will allow you to get the best of the green tea.
