Origine : : Da Bie Mountain between Liu An, Jin Zai, and, Huo Shan county, Anhui Province. Plantation attitude : 800 meters above sea level. Plantation varietals : : Du Shan Zhong Xiao Ye variety. Certification : Small production directly from local farmer. Notice : During the Sha Qing and shaping steps, the tea is processed with a soft bamboo brush to get its unique “melon seed” or “bee wing” form.
During the last baking step, each baking basket that contained 3 to 4kg of tea has to be left above a strong wood charcoal fire for 2 to 3 seconds, then loaded down to turn the leaves immediately. This step has to be repeated for 50 to 60 times until the tea leaves are “frosted”. It is said that one “baking worker” walked more than 10 kilo meters after one day baking!
Dry leaves appearance : The tea holds single leaf that is shaped loosely with slightly rolled boarder that looks like melon seed or bee’s wing. The tea doesn’t contain any bud or branch. It shows a dark green color with white “frost” on the surface. Fragrance : Clean and high roasted nut fragrance with unique and enjoyable fire note. Liquor : The pale green liquor is clean and bright. The thick and “oily” soup offers a fresh and refreshing mouth feeling, which is smooth and sweet. Taste : Refreshing is the unforgettable impression to the pallet. The smooth and oily liquor offers a rich taste and “wild” feeling combined with its pleasant nutty flavor. It followed by a lovely floral fragrance after swallowing, which is high that can be felt deeply on the back. The taste is sweet and pure with a long lasted “Hui Gan (after taste)”. Tips : When you brew Chinese green tea in a gaiwan, always leave a little bit of tea in the gaiwan between each infusion. This is call “the root” and will allow you to get the best of the green tea.
